Game processing charges too high

I had an 80# doe ground up 60/40 and packaged the cost was 82.00
I had it ground because every time i have sausage made they mess it up some how too salty or too hot ect . always something wrong!
I live near lafayette.
Does anyone have a consistent butcher shop?

I think that you may be better off getting a meat grinder and doing it yourself. To be honest, some places (not all) may put 100 pounds in the grinder and measure out your amount and wrap it. In a situation like that, you don't really know what you are getting. My dad operated a butcher shop for more than 30 years, and we never did things like that for a number of reasons. Number one is that it is wrong. Number two is because we saw the differences in the deer that came into the shop. Some were clean and taken care of properly. Others looked like somebody jerked the hide off the thing and threw it in a mud hole. We do our own. And you don't have to be a butcher to do your own well.
