Default River monster

David Simoneaux caught this huge catfish on a tree line last week. It bottomed out a 50 lb scale, so we did not get an accurate weight.

Had he cut the tail off of it while it was still alive so it would bleed out it would have been WAY better. Just have to make sure to trim all the fat off of it.

Default Big cat meat

I personally did not eat any of that one, but he has given me several from 5 to 20 lbs in the past two weeks. My family makes them disappear real quickly. Haha! They all taste fine to me, whether grilled or fried. Surprisingly some of the bigger ones do not even have a blood line in them as you think they would, like on the large bull reds for instance.

Used to snag a bunch. Take your time cleaning every silver, fat and blood line out of the fillets and will be just as good or better than any catfish fillets you can get at the fish market.
