Worked this past weekend and caught the pigs the weekend before. I would love to go to these shoots but in the off season I restrict myself to as little away from the house and then when the season begins........HE's GONE!!!!!!!!!! hehehehehehe******!!
Haven't cooked any yet but I am going to look at as many recipes as possible and try the one I think I'd like first. I have seen some pretty good ones so far.

I tried something a few years ago that turned out awesome.... if you catch one around 30 lbs scrape her good(don't skin her), quarter her, shoot her up with some good marinade then get the turkey fryer out. It makes the skin pop (like cracklins). Turned out soooooo good.

Can do the same with a cajun microwave. Cook loooooooong with low heat, THEN stoke the flames and make that skin POP!

If you have access to a welder put a drop gate on it. We have 7 like this and catch multiple hogs. I will see about posting some pics.
My neighbor has push gates and never catches crap!
