Chicken Fried Wild Turkey

1 Wild Turkey Breast
1 16 oz. bottle Italian dressing
1/2 tsp. Lemon Pepper
Dash of Liquid Smoke
2 Eggs
2 Cups Milk
Salt & Pepper
2 Cups Flour
Peanut Oil




Cut the de-boned turkey breast across the grain into 3-6 inch strips. People tend to not use the leg and back meat because of its toughness, but it’s certainly your choice. Combine the Italian dressing, liquid smoke, and lemon pepper in a covered container along with the turkey strips.  Marinate in a refrigerator for 12-24 hours.  Your favorite fish marinade can be used as a substitute to the marinade suggested above.

Begin heating the oil until it’s attained a temperature of 375 degrees F. In a bowl, beat the eggs into the milk. In another bowl, mix the flour and salt & pepper. Your favorite fish fry batter can be substituted in place of the batter above. Dip the strips into egg-wash and then roll into the batter, coating thoroughly. Place the strips into heated oil and fry until golden brown.  Enjoy immediately.
